Carollann is the Executive Director for the New Mexico Beef Council. She is the host of Behind the Burger and is partnering with guests to tell the story behind the beef in your burger, specifically telling the stories of New Mexico cattlemen and cattlewomen and others in the beef industry.
Kate Schultz brings a unique dual perspective to the table as both a ranch-raised dietitian and the nutrition expert for the New Mexico Beef Council. With family roots in agriculture spanning four generations—her great-grandfather homesteaded their Nebraska-Wyoming ranch over a century ago—Kate bridges the gap between food production and nutritional guidance with authentic expertise.
